TOMATO CHUTNEY
Ingredients
- ½ large onion, chopped fine
- 2 tbsp safflower oil
- 1 big size tomato, chopped fine
- 1-pinch hing
- 1 tsp cumin seeds
- 1 tsp black mustard seeds
- 3 curry leaves preferably fresh
- 1 tbsp fresh cilantro leaves, chopped
- ¼ tsp turmeric powder
- ½ small green chili, chopped
- 1 tsp sugar
Method –
Put frying pan on medium heat and add the oil, cumin and mustard seeds. Wait until seeds pop up. Then add hing, curry leaves, cilantro, chili and onions. Sauté until the onions brown. Then put tomatoes and sugar. Stir gently to coat them well. Cover and turn off the heat. Let sit for a few minutes and serve.
This is an instant food and should be consumed within few hours.
Kindly note that this should not be stored in copper pot or any other metal except stainless steel’s pot. Almost all the metals interact with the acid present in tomatoes and ultimately will ruin the preparation.
